I don't know if you know this about me, but six years ago, I was rushed to the hospital. I lost so much blood that I needed six units. So every year I get lots of requests for my mushroom casserole recipe. I make it every year for Thanksgiving and it is soooo good!! Trust me...once you go mushroom, you won't go back!!
3 beef bouillon cubes
1/4 cup hot water
4 Tablespoons all purpose flour
8 ounce heavy (whipping) cream
2 16-ounce containers sliced mushrooms
6 Tablespoons melted margarine or butter
1 1/2 cups herbal stuffing
Preheat oven to 350 degrees.
Dissolve bouillon cubes in hot water.
Melt margarine/butter and coat stuffing.
Spray casserole dish.
Spread sliced mushrooms evenly in casserole.
Combine water, cream, and flour. Spoon over mushrooms.
Sprinkle buttered herbal stuffing on top of mushrooms.
Bake in 350 degree oven for 20 minutes or until bubbly.
Hudson really is getting big! He is smiling these days and is so alert! Taking him to the doctor next week for his 2 month appointment so I will let you know how much he has grown afterwards! Have a great weekend!
So this is my first week back at work and I'm slowly getting adjusted to the hours after being on maternity leave for 8 weeks....and everyone keeps calling me at the worst times! Oh well...I guess I will live but it helps that I get to use my phone as much as I want and not have to worry about going over on minutes or paying extra fees. I almost forgot to blog this week because I have been so busy talking on my phone about my new baby…being on maternity leave I barely see anyone because I’m so busy with the baby so there is always lots of catching up to do! Good thing I have Cricket…my data and calls are UNLIMITED! Also, my texts and music are unlimited…I have been listening to a lot of music to get me through the day.

Well, he’s about 3 weeks old now and Hudson Michael is doing great! I posted a pic of him below so you could see how happy he is…or should I say relaxed?? He truly is a great baby and I’m sure it had something to do with his smooth delivery at the Aurora Women’s Pavilion on September 4th!
We had a great stay and everyone there was great. Now that we are home I kinda miss all the attention I got from the nurses…maybe I should have another now? KIDDING!
Okay, I’m off to take care of my little buddy and his big brother, Owen, who is absolutely in love with him. If you are pregnant or thinking of having a baby, make sure you have your baby with Aurora! They deliver the most babies in the state!
